Question r.e. water spray / air

I just wondering when a dentist is examining your teeth why do they spray the water / air? What does it do?

We blow air across the surfaces of the teeth to dry them. When a surface if covered in saliva it makes it hard to see really clearly. Using this method one can avoid having to prod the tooth with a sharp probe.
